Expedition Doctor and now self taught chef, Dr Caroline has been cooking at the Centre for the last 10 years, honing her talents by eating at the poshest of restaurants then going into the kitchens to quiz the chefs.
She said "this is all about being inspired by ideas".
Our Story
10 years ago Nick's Expedition Centre opened its doors to riders who wanted to chat and ride with Nick to fine tune their own adventure plans. The back road riding in West Wales has always been a winner with riders signing up for the weekend. Then, slowly at first, until suddenly we all started to become aware that incrementally over many years, the food started to take centre-stage.

Unique in the world of motorcycling & e-cycling experiences, Nick's Expedition Centre offers you wonderful Welsh back-road riding with probably the most experienced two wheel ultra endurance adventure rider in the world, but at dinner and breakfast Dr Caroline takes over where you can enjoy the finest food you may have ever tasted.

Lamb shanks from Rattrays, mid Wales's smartest butchery ... cooked lovingly ...
Did we mention the cheese course? Rather nice at the beginning of the meal - so French!
Pudding time ... champagne rhubarb, custard & cream, maybe?
Cucumbers & pumpkins as tasty accompaniments, grown at home from seed
And for the vegetarians we have beautiful nourishing food
